You will need:
Veggies of choice
*I used zucchini, squash, tri-colored peppers and carrots
Spices of choice- about a tablespoon each
*I used salt, pepper, cumin, paprika, garlic powder
Pre-heat oven to 375°. Rinse and pat dry chicken with paper towel. Combine all spices in a small bowl. Chop all the vegetables and place in seperate bowl. Drizzle chicken with olive oil and rub in all over the chicken. Sprinkle dry spice rub all over chicken inside and out. Leave a small amount of spice mix and apply to bowl of veggies. Stir. Prepare baking Pan by applying veggie oil inside Pan and around sides. Put chicken in the Pan. Stuff chicken cavity with a generous amount of vegetables until full. Spread the remaining vegetables around chicken. Bake until done ( about an hour and 15min or until thermometer reads inner temp over 165°-185°) take out and let rest. Carve and serve with the vegetables.
For sides I made buttery mashed potatoes and fried corn.
