Feast Your EyesOn this iron-clad recipe that is quick and easy for your next chili fix. Brown 2lbs fresh ground turkey (never frozen) in a pot with chopped onion and bell pepper in 2 Tablespoons of oil or butter. Adding a bit of fat will not only help with browning, but will give tons of moisture to this normally dry protein. Season with teaspoon of salt, pepper, garlic and onion powder, chili powder. Once cooked through add a can of: chili beans, red kidney beans, black beans, stewed tomatoes, tomatoes with chillis, diced tomatoes. Fill three of those empty cans with water, dump that in. Dump in a pack of chili seasoning. Bring to boil, reduce to simmer. Simmer on very low heat for at least an hour, stirring occasionaly. Serve as is or with your choice of toppings like what you see here! That's it! Easy, right? Give it a try and let me know how you like it. This recipe makes about 2 quarts. You can freeze leftovers for up to six months.
So if you're like me live in one of the unfortunate states affected by the Arctic Blast today and had to stay in then coming up with a day of meals for the kids was more than likely on the agenda. Honestly, I wasn't even trying to leave the bed this morning. I had planned on today being a "get your own cereal" type of day last week when I heard the words "two-day arctic blast". Low and behold the chirren popped up at the crack of dawn-literally-wanting a Christmas-type warm, hearty breakfast. Mrrrrrr. Bah Humbug.
Me as Ursula, Queen Witch of the Sea Something about having kids makes the holidays crazy! From Halloween to Christmas, these three months tend to be a blur. This year I was all to happy to take the DIY approach. Since William was three we stopped doing the traditional trick or treating and stuck to public themed events that had activities and candy for him to take home before enjoying movie night at home. This time around I was feeling like the kids could really use some family fun time since it had been quite a while. I decided we were going to still do the same things: trunk-or-treat +move night, but a quick moment in the van with the kid through me for a lil loop. We were at one of the trunk-or -treat events like two days out about to get out and walk around when he saw all of the other kids already in costume and having fun. He was wearing a jacket and sweats.
Farmer's Market Finds this week include carrots, tomatoes, garlic, fairy-tale and white eggplant, baby potatoes, red and white onions, local raised ground beef, honey, and two different type of tea.
My son is literally the best kid a mother could ask for. He is kind and funny, a great helper, and he is learning to be more and more responsible everyday. Unfortunately, we haven't been able to get much time as a family, much less get to do something considerably fun for everybody. I was...am...very grateful that we had the opportunity to cut loose a bit and spend a little change on the big guy.
First of all that's horrible that my last published post was Mother's Day. I literally have about five unfinished drafts glaring at me with wide pitiful eyes. Hey, I have been cooking and working, my hormones are raging, and Idgaf about no GD peas! (Three dollars if you know what movie that's from, not really, but comment if you do.) Anywho, I do plan to catch up with you and the drama that is my life and the beauty I create with it. I have tons of food and family photos and other content for you so there's that. lol. Just gotta get it up, right? I gotcha. In the meantime, enjoy this photo of last night Father's Day celebration for the old man. I am forever grateful that he made me a mother. He is knocking the dad thing over the fence and out of the park. Kudos to that handsome guy. And all of the handsome guys around the world doing the same. You are appreciated.
